Small farms from Central Vietnam
Our organic chillies are sourced from the Central North of Vietnam. Plants are cultivated by small households under organic farming practices.
Farmers rotate chilli crops with legumes or sesame to enrich the soil, prevent pests and enhance biodiversity.
Farming Practices
Anyone who grows chillies knows they are a "fickle" crop. They are sensitive to the weather, viruses, and anthracnose. Instead of using chemicals, we respect nature's laws: the plant must develop natural defenses.
To survive in nature, chillies must have natural defense. Farmers must replant their fields again and again. Weak plants can’t survive, but strong ones will thrive for the next cycle. Entire seasons are sometimes sacrificed so the plants can build their own strength. This process can take 2 to 3 years.
When a skilled farmer can pull this off, the payoff is a chilli plant that hits the difference. Especially Bird’s Eye Chilli, a small but powerful variety known for its intense heat, typically 60,000-100,000 SHU, far spicier than the chillies most commonly found in the market.
