PRODUCT INFORMATION

Organic Chilies are organically grown in the North Central of Vietnam. These are famous for their thick flesh, high oil content, and distinctive, lingering spiciness.

Each chili delivers a bright, spicy heat and fragrant aroma, ideal for enhancing sauces, seasonings, and dried spice blends. Its natural sharpness and clean taste make it a versatile ingredient for both traditional Asian recipes and modern culinary creations.

We offer three varieties:

  • Whole dried organic mild chilies with a deep red color and low heat profile for cooking

    Low Heat Chili

    (<1,500 SHU)

  • Whole dried organic medium heat chilies, showcasing uniform size and balanced spice level

    Medium Heat Chili

    (50,000 - 60,000 SHU)

Small farms from Central Vietnam

Our organic chillies are sourced from the North Central of Vietnam. Plants are cultivated by small households under organic farming practices.

Farmers rotate chilli crops with legumes or sesame to enrich the soil, prevent pests and enhance biodiversity.

Farming Practices

Anyone who grows chillies knows they are a "fickle" crop. They are sensitive to the weather, viruses, and anthracnose. Instead of using chemicals, we respect nature's laws: the plant must develop natural defenses.

To survive in nature, chillies must have natural defense. Farmers must replant their fields again and again. Weak plants can’t survive, but strong ones will thrive for the next cycle. Entire seasons are sometimes sacrificed so the plants can build their own strength. This process can take 2 to 3 years.

When a skilled farmer can pull this off, the payoff is a chilli plant that hits the difference. Especially Bird’s Eye Chilli, a small but powerful variety known for its intense heat, typically 60,000-100,000 SHU, far spicier than the chillies most commonly found in the market.
