Ingwer ist eines der wichtigsten Gewürze Vietnams – eine Nutzpflanze, die sowohl die tägliche Küche als auch die ökologische Landwirtschaft des Landes prägt.

Bei Viet Haus wird Bio-Ingwer in unseren eigenen Anbauprojekten kultiviert. Jeder Hof folgt einem einfachen Prinzip: Bodengesundheit fördern und Qualität ernten. Das Ergebnis ist Ingwer mit einem kräftigen Aroma, angenehmer Schärfe und der natürlichen Komplexität, die Köche und Mixer sofort erkennen.

Wir stellen zwei Hauptsorten von Ingwer vor – kleinen Ingwer und Büffelingwer.

  • Der kleine Ingwer ist hocharomatisch mit konzentrierter Schärfe und eignet sich ideal für Tees, Kräuteraufgüsse und Wellnessmischungen.
  • Der Büffelingwer hat größere Wurzeln und einen milderen Geschmack und wird daher bevorzugt für Gewürze, Soßen und die Lebensmittelverarbeitung verwendet.

THE ORIGIN

Our Organic Ginger comes from the remote mountain slopes of North Central Vietnam.

Rising 950 meters above the sea,yhe climate is defined by large different day-night temperature, with hot summers and freezing winters. This “perfectly harsh” weather pushes the plants to produce more essential oils and aromatic compounds. This creates a deep, warm spiciness and a flavor far more distinctive than lowland ginger.

THE CULTIVATION

There are 108 farming households, primarily from the Hmong ethnic minority.

Each household cultivates across 2–3 separate hills, completely isolated from other production zones. Their traditional cultivation knowledge passed down through generations.

This farm area features an isolated ecosystem far from industrial zones, where the ginger grows naturally on regional terrain. Their farming purely depends on nature, using 100% natural rainwater for irrigation.

Farmers practice crop rotation - alternating ginger, turmeric, and chili with local crops (like rice and squash) to reduce pests, enrich the soil and maintain a balanced ecosystem. It's also a way to increase people's income through the seasons.

VARIETIES: SMALL GINGER & BUFFALO GINGER

Through harsh climate conditions, our ginger grows slower and accumulates more essential oils. This results in a deep, warming heat with a long-lasting after-taste. We offer two distinct varieties:

  • Large, robust Buffalo ginger variety from Viet Haus featuring thick skin and a potent spicy aroma.

    Buffalo Ginger

    Large, fleshy, and low in fiber. It has a large size and stable essential oil content. This is the ideal choice for cooking ingredients, preserves, or dried slices.

  • Concentrated small ginger roots from Viet Haus, known for their intense spicy flavor and high essential oil content

    Small Ginger

    Small, dense, and fibrous. It contains a higher concentration of essential oils, with a sharp aroma and deep spiciness. This is the perfect choice for herbal teas, premium spices, or medicinal extracts.
